I'm not talking about the size (although it's related), but how many people they want in a kitchen. Some clients want everyone in the kitchen, including guests and relatives, to help in cooking or processing the meal, which means a larger kitchen to handle the people. Others don't want anyone but a few people in kitchen, so they're not tripping over people to get the meal finished, which means a smaller more efficient kitchen.
